Red-wine-ESTALET

SÉMILLON & SAUVIGNON BLANC 2012
A beautiful Shiraz from the Breedekloof valley with sweet fruit and
spicy flavours. A wine that will complement any red meat roast or
Mediterranean style dish.


VITICULTURE & VINIFICATION
Vine age – 17 years; vine density – 3 500 vines per hectare; yield – 8
tons per hectare. Micro irrigation takes place before harvest. Vines are
planted 1.30 meters apart to create density as that the vine can com-
pete for nutrients feeding, what would create a concentrated fruit.
Intensive leaf and shoot management in October allows for even ripe-
ness and shady fruit concentration development.Grapes were picked at 23.5° Brix and had two weeks skin-contact in open fermenters. Skins and juice were mixed daily. After fermentation, the skins were pressed with 1.2 bars of pressure. Using only dried yeast, fermentation occurred over a two week period with the wine spending 16 months in new and second fill small French oak barrels.

DESCRIPTION OF WINE
The 2011 vintage of our Bizoe Estalet Shiraz will develop into a well-integrated wine with exciting sweet fruit and spicy flavours. This wine will develop even further over time and will complement red meat roast and Mediterranean style dishes. Matured for 17 months in new and second fill French oak barrels. Limited edition with only 4 500 bottles produced.
